It’s been a busy week with 2 kids home sick and a husband with the flu! I am a survivor.. for now! Maybe all these supplements I take on a daily bases are paying off. I’ll talk about those another day 🙂
I’ve had a rough week this week controlling my blood sugars. I think it is a combination of lack of sleep, stress and just grabbing wrong things to eat at the wrong time. When you have a sick toddler in your bed gracing you with her presence with either a foot or a butt in your face, you wake up. Sometimes you wake up thirsty and hungry. Damn you cookie jar.. that’s all I’m saying. Added to the munchy madness I normally don’t eat bread and found myself eating it a lot this past week a result of just being lazy and tired. My fasting blood sugars have been unusually high making me even more tired. My own fault. It’s part of being human. I’m definitely not perfect.
This week I plan on getting back on track and do some meal planning and lunch prepping so I don’t grab the wrong foods. My advice to those busy people out there grabbing all the wrong foods.. meal prep! It’s done wonders for me controlling my blood sugars. Unfortunately, there’s weeks I just don’t schedule meal prep in properly.
My breakfasts and dinners are always on key. I put a lot of thought into these meals daily.
Let’s talk lentils
Lentils are high in B vitamins, iron, complex carbohydrates, protein and fiber.
Soluble Fiber
Slows digestion helping release sugars into the blood stream slower to avoid quick spikes .
Lentils have 16g of Fibre per cup
Protein
Just like fiber protein slows digestion. I used to see a nutritionist for my diabetes. It was always recommended to have some sort of protein with any carbohydrates. I TRY to keep my protein plant based. But, it doesn’t always happen. I’m not vegan nor vegetarian.

Are you seeing Trend here? 😄 It’s very simple..try and avoid blood sugar spikes. They make you feel horrible and tired too..

Instant Pot Mexican Lentil Soup
1/2 Spanish Onion, diced
1 green bell pepper, diced
1cup roasted red peppers (I used jarred) diced
2 carrots, peeled and diced
2 stick of celery, diced
3 cloves of garlic, minced
1 tbsp extra virgin olive oil
2 tsp cumin
2 tsp garlic powder
1 tsp turmeric
1.5 tsp chili powder
1/2 tsp chipotle flakes
1/2 tsp sea salt
1 28oz can diced tomatoes
4 cups red Lentils
10 cups vegetable broth (you can use chicken broth)
Put instant pot on Sauté
when it says hot add olive oil and all diced veggies and garlic for 5 minutes. Be careful of popping oil!
Keep on sauté and add broth, tomatoes and lentils
Now add all the spices
turn off sauté
place lid on making sure the valve is CLOSED
set manual high pressure 5 minutes
natural release 11 minutes
release remaining pressure
tada!
I topped with lime and more chipotle flakes
